Boozy Milkshakes with Chocolate Caramel Rims

A boozy take on a root beer float, these boozy milkshakes with Guinness and vodka are complete with a homemade caramel chocolate rim and fresh whipped cream.

Ingredients

Shaved Chocolate and Caramel

  • bar of dark chocolate
  • ½ cup granulated sugar
  • 2 tbsp butter chilled
  • ⅙-¼ cup heavy cream
  • ¼ tsp salt

Whipped Cream

  • ½ cup heavy cream
  • ½ tsp vanilla
  • 2 tsp powdered sugar

Milkshake

  • 2 ½ cups vanilla ice cream
  • ½ a Guinness
  • 3 ounces vodka

Instructions

Shaved Chocolate and Caramel

  1. Using an apple peeler, shave the sides of the chocolate bar until you have roughly ½-¾ of a cup of shavings. Add majority of shavings to a shallow plate.
  2. Add granulated sugar to a heavy-bottomed medium saucepan set over medium heat. Stir constantly until sugar is completely melted with no lumps remaining and has turned a copper color. It will look crystalized at first but will eventually completely liquify.
  3. Once all of the sugar has melted, reduce heat to low and whisk in the butter, one tablespoon at a time, whisking until incorporated. Remove from heat.
  4. Add the heavy cream and salt and whisk until combined. Return to low heat for 1-2 minutes until caramel thickens slightly. Set aside to cool.
  5. Rotate rim of each milkshake glass in the plate with the caramel, forming an inch-long rim. Immediately roll the caramel rims in the plate with the chocolate shavings, pressing down to ensure the chocolate sticks and forms a thick rim.

Whipped Cream

  1. Add heavy cream to the large bowl of a stand mixer and beat on high until stiff peaks almost form.
  2. Add vanilla and powdered sugar and beat until just combined and whipped cream is thick but still airy.

Milkshake

  1. Blend ice cream, Guinness, and vodka in a blender until smooth but still thick. Pour into prepared glasses.
  2. Top with whipped cream. Add reserved caramel and swirl with the back of a spoon. Top with reserved chocolate shavings, grab a straw, and enjoy!
