Buffalo Chicken Stuffed Sweet Potatoes with Homemade Ranch

Satisfying and nutritious, these baked buffalo chicken stuffed sweet potatoes are topped with homemade ranch and all the best fresh toppings.

Chicken Stuffed Sweet Potato

  • 4 medium-large sweet potatoes
  • 2 cups chicken, shredded
  • 2/3 cup buffalo sauce
  • 1 cup cheddar, shredded
  • kosher salt
  • black pepper
  • homemade ranch, recipe below
  • scallions, chopped
  • parsley
  • 1 avocado, diced
  • red onion, finely chopped
  • jalapeño, sliced

Homemade Ranch

  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1/2 cup buttermilk
  • 1 tsp apple cider vinegar
  • 1/2 tsp Worcestershire
  • 1/2 tsp onion powder
  • 3/4 tsp garlic powder
  • 1/4 tsp dried dill
  • kosher salt
  • black pepper


Buffalo Chicken Stuffed Sweet Potatoes

  1. Preheat oven to 425 degrees.
  2. Using a fork, poke holes in each sweet potato. Place on a foil-lined baking sheet and bake for 50-60 minutes until almost completely softened.
  3. Meanwhile, in a medium bowl combine shredded chicken, buffalo sauce, cheddar, and a pinch each of salt and pepper.
  4. Remove sweet potatoes from oven and carefully cut a slit in each down the center, pulling the sides apart slightly. Divide the buffalo chicken between each. Return to oven to bake for an additional 10 minutes.
  5. Meanwhile, make homemade ranch below. Remove sweet potatoes from oven, top with ranch, scallions, parsley, avocado, red onion, and jalapeno to tase.

Homemade Ranch

  1. In a medium bowl, whisk together sour cream, mayo, and buttermilk. Stir in remaining ingredients and refrigerate until ready to use.
