Turkey Avocado Sandwich

This easy lunch recipe is the most delicious and satisfying turkey avocado sandwich complete with honey mustard, cheddar, and some lemony arugula.


Servings: 1 sandwich for 1-2 people

  • 1/8 cup mayo
  • 1/8 cup honey
  • 1/8 cup dijon mustard
  • 1/2 cup arugula
  • olive oil, for drizzling
  • 1-2 tsp lemon juice, fresh
  • kosher salt
  • black pepper
  • focaccia or ciabatta bread, homemade or store-bought
  • 1/4 pound sliced turkey breast
  • 3 pieces bacon, cooked
  • 2-3 slices cheddar
  • tomato, small, thinly sliced
  • half an avocado, thinly sliced


  1. Preheat the broiler.
  2. Make the honey mustard by whisking the mayo, honey, and dijon together in a small bowl until smooth. Add the arugula to another small bowl and toss with olive oil, lemon juice, salt, and pepper.
  3. Turn a piece of focaccia on its side and slice it down the middle to create 2 thinner pieces. Place the 2 pieces inside side up on a baking sheet, drizzle with olive oil, and broil until lightly toasted. Remove from oven.
  4. Spread some of the honey mustard on to the inside of both slices. Top the bottom slice with some of the arugula, then the turkey, bacon, cheddar, tomato, and avocado. Top with a little more arugula then the other focaccia slice. Serve immediately with any leftover honey mustard for dipping.
