Apple Cranberry Galette

I will be honest. I have made a lot of pies in my day (one of my personal favorites to bake actually) but this is the first galette that I have made and I have to say that it was far easier than I had anticipated, and so tasty.

The dough and filling together- the perfect duo.

The dough is simple, sweet, and a classic, and the filling has all the necessary components of an apple pie filling with some fresh cranberries mixed in. Assembling the galette together is much easier than it appears and then you're ready to slice and serve.

Although taking out the food processor can sound like a process in itself, making the dough for this recipe is actually quite quick and easy!

The dough is composed of just five simple ingredients.

  • butter- unsalted and chilled
  • flour- the base of your dough
  • sugar- just to add that little bit of sweetness
  • salt- 1 tsp does the trick
  • water- ensure that it's ice cold

The food processor really does wonders when making this dough and just makes the process as a whole much easier.

As I said, the filling is so delicious but simple enough where it will bring you back to your favorite, classic apple pie. While your dough is chilling, it is the perfect time to make your filling.

It's as easy as another five ingredients!

  • apple slices
  • fresh cranberries
  • sugar
  • lemon juice
  • flour

Make sure all of the ingredients are mixed together until both the apple slices and the cranberries are fully coated. Once the dough is done chilling, make sure to thoroughly flour your work surface and begin to roll your dough out into a circle. Then carefully transfer to a greased baking sheet.

In order to achieve a nice open face design, I first started with piling up the apples and cranberries in no particular arrangement or array. Once there was a solid base I then carefully placed some apple slices on top in a spiral design and then topped it off with some cranberries sprinkled on top. Next comes the folding of the dough on top of the filling, For this step, I took a section of the dough and folded it toward the filling, angling it to one side. I continued to do this with each section, angling each, creating a spiral design until the edge is complete.

Then pop your galette in the oven! Bake for approximately 45 minutes, checking on it to also see when the edges begin to brown and golden. Serve with some whipped cream and vanilla bean ice cream and enjoy!

Ingredients

Dough

  • 10 tbsp unsalted butter, cold
  • 2 1/2 cups flour
  • 2 tbsp sugar
  • 1 tsp salt
  • 9-10 tbsp water, ice cold

Filling

  • 4 apples, sliced
  • 3/4 cup fresh cranberries
  • 1/3 cup granulated sugar
  • 1/2 tsp lemon juice
  • 2 tbsp flour

Instructions

  1. Cube butter. Combine flour, sugar, salt, and butter in the food processor and pulse several times until combined.
  2. Add water one tablespoon at a time, pulsing between additions until crumbles have formed.
  3. Once all of the water has been added, take dough out and form into a ball. Try not to handle the dough too much or it may become tough. Chill for 1 hour.
  4. While the dough is chilling, combine the apple slices, fresh cranberries, sugar, lemon juice, and flour in a medium sized bowl. Mix until apples and cranberries are fully coated.
  5. Once dough is done chilling, preheat the oven to 400 degrees. Roll it out on a floured surface into a circular shape, approximately 1/16 of an inch in thickness. Carefully transfer the dough on to a greased baking sheet.
  6. Place the apple slices and cranberry mixture in the middle of the dough, spreading evenly, leaving approximately 1 inch of dough around the edge.
  7. Fold the dough around the edge up and slightly over the apples and cranberries, layering and pinching along the way.
  8. Bake for approximately 40-45 minutes, checking to see when edges of galette begin to become golden. Remove from oven, let cool, and slice. Serve with whipped cream or vanilla ice cream.
