I've always loved breakfast and another love that comes with loving breakfast is a love of pancakes and waffles. And to me, when I think of pancakes and waffles I think chocolate chips, and what pairs perfectly with chocolate for breakfast? Bananas! That's how the creation of these banana chocolate chip waffles came to be. They're sweet, satisfying, and have that fruity flavor mixed in too.
These are so quick and easy to make. I personally love to whip them up on a Saturday or Sunday morning when I feel like having something a little different for breakfast or dare I say... for breakfast for dinner sometime during the week (I love sneaking in breakfast for dinner in the middle of the week, I've always thought it feels like a special, little treat).
As always, in my opinion, mini chocolate chips have regular chocolate chips beat every time! Mixing in a fair share of chocolate chips will bring your banana waffles to the next level. And of course if you're feeling extra sweet sprinkle some on top or do a little chocolate drizzle and make these into a tasty dessert waffle (grab some whipped cream too if you're going for it)!
Stack them high! I love stacking my waffles so that the maple syrup can seep into each layer and so you can get that big, stacked forkful too. Definitely have some extra banana slices for topping or for on the side too, as when they're extra sweet and ripe, they pair perfectly with each forkful of delicious waffle.
The best part about these waffles is there's banana and chocolate chips mixed into the batter AND piled on top for the toppings! Bake your waffles for just enough time so the edges have a nice crisp but the insides are still nice and soft and fluffy. Grab yourself a glass of OJ (or I would support a cup of coffee of course too), top with maple syrup, and dive in!
A sweet breakfast treat! Banana chocolate chip waffles topped with real maple syrup, of course.
