Blackberry and Basil Brie Grilled Cheese

That's a mouthful! Okay, so I've always been a HUGE fan of brie (not that that's not the case for all cheeses...but it's still one of my favorites). A baked brie with fruit and honey, yes please. Think of this blackberry and basil brie grilled cheese as the lunch version of that tasty brunch/dessert classic. It has all the necessary elements of a classic grilled cheese- little butter to crisp it up, freshly sliced pieces of sourdough, and a whole lot of cheese in the middle. This grilled cheese takes it to the next level with its sweet twist on a long time classic.

Time to grab the ingredients!

Of course the brie is the star here so (as always) don't skimp on it in your sandwich. As if that's not enough, the combination of blackberries, basil, and honey is one that just can't be turned down.

In my opinion, the key to a 10/10 grilled cheese is first your bread. My go to is always sourdough and I think in the case of this grilled cheese it is the perfect bread to soak up that butter and get nice and crispy, while also cutting some of the sweetness of the brie and honey, as well as to add a little bit of savory to your sweet.

And all the berries...

I have always loved blackberries. Personally, I think that they are an extremely underrated berry. They're also so versatile, I love having some in the fridge at all times for whatever I may be in the mood for.

Achieve that golden glow on your grilled cheese, making sure its got that nice crisp to the outer edges. This will also ensure that your brie in the middle has a chance to melt nicely within. Top with basil, drizzle with honey, and enjoy!

Blackberry and Basil Brie Grilled Cheese

A little honey, a few blackberries, a sprinkle of basil, and a whole lot of brie! This brie grilled cheese is a sweet twist to a classic sandwich.

Ingredients

Servings: 1 sandwich

Sandwich

  • 1 tbsp butter chilled
  • 2 pieces sourdough bread
  • 1 tbsp butter melted
  • 2 ounces brie sliced (¼ cup)
  • 4-5 large blackberries sliced
  • 3-4 basil leaves chopped
  • 1 tsp honey

Toppings

  • 1 basil leaf chopped
  • ½ tsp honey

Instructions

1. Heat the chilled butter in a small to medium sized skillet on low to medium heat. Lightly brush the outer side of each piece of sourdough with melted butter.

2. Layer brie, blackberries, basil, and honey (in that order) on one slice of the sourdough. Top with the other piece of sourdough (with the sides brushed with butter facing out).

3. Place sandwich in skillet and cook for 4-5 minutes on each side or until golden, pressing the sandwich down with a spatula throughout, helping to melt the brie and crisp the bread.

4. Once both sides are golden and crispy, remove from pan. Slice in half and sprinkle with additional basil and drizzle honey. Enjoy!
