This springy blueberry lemon drop martini is made with a homemade blueberry simple syrup, both limoncello and lemon zest, and is the prettiest purple color!

Ingredients

Blueberry Simple Syrup

  • 1/4 cup water
  • 1/4 cup sugar
  • 1/4 cup blueberries, fresh or frozen

Blueberry Lemon Drop Martini

  • Lemon zest and sugar, for rimming glass
  • Lemon slice, for rimming glass
  • 2 ounces blueberry (or plain) vodka
  • 1 ounce limoncello
  • 3/4 ounce fresh lemon juice
  • 1 1/4 ounces blueberry simple syrup
  • Egg white
  • Blueberries and lemon slice, for garnish

Instructions

  1. Start by making the simple syrup. Add the water and sugar to a medium saucepan and bring to a boil, stirring until sugar has dissolved, 2-3 minutes. Add the blueberries and continue to simmer until they have broken down and the sauce begins to thicken, about 10-15 minutes. Let cool slightly then strain into a jar, pushing down on the blueberries to release as much of the simple syrup as possible.
  2. Add lemon zest and sugar to a small plate, rub the zest into the sugar, then use the lemon slice to wet the rim of a martini or coupe glass. Press the rims of the glasses into the lemon zest sugar to coat.
  3. Add vodka, limoncello, lemon juice, blueberry simple syrup, and egg white to a cocktail shaker. Shake well for at least 30 seconds until foamy. Add ice and shake well again. Strain into prepared glass and garnish with blueberries and lemon slice.
