My new life goal has been to incorporate as many recipes that include buffalo sauce into my week as possible. While this may seem uncessary, if you've had a good buffalo sauce I think you can agree that it's so versatile and adds so much to any meal. While I usually incorporate it into a recipe for chicken wings, or nachos, or a dip, I've recently realized that it can be incorporated into so much more!
Okay so hear me out, if you're looking for an ultra satisfying meal that incorporates all the best aspects (cheese, buffalo sauce (obviously), some starch, and all the toppings), a loaded potato is what you're going for. Since we of course are so obsessed with creating what we like to call fun-food, it's no surprise that we love these buffalo chicken stuffed sweet potatoes that are super satisfying, fun, and full of nutritious deliciousness in every bite.
If you jumped to the recipe card and saw 1 hour and 25 minutes, I hear you, that sounds like a long time. But fear not! These stuffed sweet potatoes can certainly be a meal on their own, and most of the cooking time is just cooking the sweet potatoes. These are really easy, really delicious, and 100% worth every oven minute!
The beginning of this recipe is as easy as poking some holes in the sweet potatoes, placing them on a baking sheet, and popping them into the oven! In my opinion, recipes that start with a relatively long cook time in the oven can actually be the best, because you're free to prepare everything else or do whatever else you want in the meantime!
Once the sweet potatoes are in the oven, it's as easy as mixing together the buffalo chicken filling. In my opinion, the sweet potato and buffalo sauce combo is one that I'll definitely be coming back to. The flavor of the sweet potato pairs perfectly with the heat from the buffalo, and each bite ends up perfectly balanced! You'll just need to grab-
For the chicken, you can either use shredded chicken from a rotisserie chicken, other leftover chicken you might have, or quickly cook up and shred some chicken breast. In this filling, the cheddar here is so essential, and makes each bite extra delicious!
Once the sweet potatoes are quite soft (you can test one out by sticking a fork deeper into it to make sure it feels very soft), take them out of the oven, and carefully cut a slit down the middle of each. Use two forks or spoons to carefully split the (very hot!) sweet potatoes partially open.
Then it's as easy as dividing the buffalo chicken mixture between the four sweet potatoes. You'll want to stuff it partially into each cut potato, but also leave it slightly heaped up on the top. Pop these back into the oven for just 10 more minutes to allow that cheddar to get nice and melty.
