Caprese Avocado Bruschetta

Okay, anyone that knows me knows that my main food group when preparing a snack or meal is bread. I know, everyone loves bread (how could you not right?) but it seems as if even if I try to avoid it there's always some snuck in when I prepare a savory meal or snack. With this being said, you can understand how I am a major fan of a good bruschetta. It's basically the perfect excuse to pile on your favorite ingredients on top of your favorite kind of bread.

Now when I think about bruschetta I think of the classic fresh mozzarella, cherry tomato caprese bruschetta. And there is definitely a reason why this is a classic, it's satisfying and the tomato, mozzarella, and basil combo is really perfect. This bruschetta is that classic Italian version but with a few added ingredients for a twist. Plus, when preparing a bruschetta, I can't help but think the more the better when stacking on the ingredients.

The bread and in my opinion, the most important ingredient

When making a bruschetta the first thing to start with, and I believe also the most important, is the bread! In our family, we love a sliced sourdough loaf so that is almost always my easy and delicious go to. You can also either toast or grill the bread. A traditional bruschetta is grilled but if the weather is stopping you from this don't fret- they will still be delicious popped in the toaster! Once you have your bread, then it's time to get the rest of your ingredients prepped and ready.

  • olive oil and garlic - brush your bread with an olive oil and garlic mixture before toasting or grilling
  • avocado - you're going to want to spread a thin layer on your toast because really, how can we resist it
  • cherry tomatoes - tossed in olive oil and salt and pepper, I like to have a variety of different kinds of cherry tomatoes to slice and add on top
  • fresh mozzarella - also tossed in olive oil and salt and pepper, sliced into small cubes- the perfect pair to the tomatoes
  • basil - chop and sprinkle on top!
  • balsamic glaze - drizzle on a hefty load of balsamic glaze, much easier to drizzle and add on top than the classic balsamic vinegar
  • micro greens - and just for an extra healthy boost, finish with a handful on top!

Assembling your bruschetta

Now let's talk assembly! The order can be altered slightly but should mainly be stuck to as it can help when stacking high and also for your flavors to truly all work together.

  1. First brush your bread with the olive oil and garlic before toasting or grilling
  2. After the bread is toasted/grilled, spread the avocado on
  3. Add cherry tomatoes with fresh mozzarella after tossing in the salt and pepper olive oil mixture
  4. Sprinkle chopped basil
  5. Drizzle a hefty amount of balsamic glaze on top
  6. Add a nice little pile of micro greens on top

And voila! It really is that easy and makes for the perfect filling snack or lunch. Truly one of my favorites and it's the perfect thing to keep in your healthy, snack rotation.

Caprese Avocado Bruschetta

A twist on a classic with this caprese avocado bruschetta with micro greens! Healthy, filling, and delicious.

Ingredients

Servings: 2

  • 4 tbsp olive oil, divided
  • 1/4 tsp garlic, minced
  • 4 slices of sourdough bread
  • 1 avocado
  • cherry tomatoes, chopped
  • 1/4 cup fresh mozzarella, cubed or sliced
  • 1/2 tsp fresh basil, diced
  • salt and pepper to taste
  • balsamic glaze to taste
  • 1/2 cup micro greens

Instructions

  1. Combine 2 tablespoons olive oil and garlic in a small bowl. Brush each piece of sourdough on one side with olive oil and garlic. Grill or toast each piece of bread until golden brown.
  2. Once toasted, spread a quarter of the avocado on each piece of sourdough.
  3. Toss cherry tomatoes, fresh mozzarella, and basil in remaining 2 tablespoons olive oil and season with salt and pepper. Once coated, add cherry tomatoes, fresh mozzarella, and basil to each toast, evenly spreading out the toppings between the toasts.
  4. Drizzle balsamic glaze on each toast, top with micro greens, and enjoy.
