One of my all time favorite holiday sweets, and one that I also somehow seem to forget about every year until December comes along is caramel popcorn. It's super simple but also super underrated in how satisfying (and addicting) it is.

Also when it comes to Christmas and the holidays the easier and quicker, the better. Once you make this popcorn and it's done, then you can store it in an airtight container, meaning you can make it in advance for the holidays and then you don't have to worry about it until the day of. And even then, it's as easy as pouring it until a festive bowl or tin and voila!

Let's talk popcorn...

Okay so for this recipe it's all in the name- caramel and popcorn! The popcorn is as easy as putting the popcorn kernels into your air popper, and if you don't have one just use any plain popcorn! Personally, I always forget just how good popcorn is until I make it again. I love popping it in the air popper and watching it pop to perfection (there is nothing worse than some burnt popcorn).

The caramel syrup is the real star here

Although yes, the popcorn is delicious and the base of this recipe, let's be honest, the caramel syrup really is the star in this recipe. Let's take a look at the ingredients.

  • light brown sugar- simple and sweet
  • butter- when it comes to any kind of popcorn a true necessity
  • light corn syrup
  • salt- sweet and... salty!
  • vanilla extract
  • baking soda

For this recipe, it really is as simple as combining the ingredients (in the specified order), heating the mixture, combining the popcorn and caramel syrup, and popping it (no pun intended) in the oven!

An important note for this recipe is to ensure that when you are mixing the caramel into the popcorn that you are mixing gently and carefully folding it throughout the popcorn, still ensuring that all of your popcorn is coated in the caramel syrup. It's worth it to take the extra time so that when you're enjoying this sweet snack on Christmas each kernel you pop into your mouth is caramel-y!

Caramel Popcorn

Ingredients

  • 12-15 cups air popped popcorn
  • 1 cup light brown sugar
  • 1/2 cup (1 stick) salted butter
  • 1/4 cup light corn syrup
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda

Instructions

  1. Bring brown sugar, butter, corn syrup, salt, and vanilla to a boil.
  2. Boil for 5 minutes, stirring constantly.
  3. Remove from heat and stir in baking soda.
  4. Mix until light in color.
  5. Combine popcorn and caramel syrup in a large buttered bowl. Mix well ensuring that popcorn is evenly coated.
  6. In a large buttered roasting pan, spread popcorn mixture.
  7. Bake at 300 degrees for approximately 1 hour, stirring every 10 to 15 minutes.
  8. Remove from oven and let cool. Store in air tight container.
