Caramel Sea Salt Dark Chocolate Brownies with Cashews


I am a sucker for salted caramel. Make it sea salt and throw some cashews in there? You got me hooked! These dark chocolate brownies will make your mouth water with the caramel swirled in and the sea salt flakes sprinkled on top, complimenting that dark chocolate sweetness with the oh so delicious salty.

Caramel Sea Salt Dark Chocolate Brownies with Cashews

Rich, sweet, and salty! These dark chocolate brownies have a little something for everyone.

  • 1 cup granulated sugar
  • 4 tbsp butter chilled
  • ⅓ cup heavy cream
  • ½ tsp salt


  • ½ cup flour
  • ¾ cup sugar
  • ½ cup light brown sugar
  • ¾ cup cocoa powder unsweetened
  • ½ tsp salt
  • 2 eggs
  • 1 egg yolk
  • 1 stick salted butter melted
  • 2 tsp vanilla extract
  • 3 tbsp canola oil
  • ¾ cup dark chocolate chips chopped
  • ¼ cup cashews
  • sea salt flakes



  1. Add granulated sugar to a heavy-bottomed medium saucepan set over medium heat. Stir constantly until sugar is completely melted with no lumps remaining and has turned a copper color. It will look crystalized at first but will eventually completely liquify.
  2. Once all of the sugar has melted, reduce heat to low and whisk in the butter, one tablespoon at a time, whisking until incorporated. Remove from heat.
  3. Add the heavy cream and salt and whisk until combined. Return to low heat for 1-2 minutes until caramel thickens slightly. Set aside to cool.


1. Preheat oven to 350 degrees.

2. Combine flour, sugars, cocoa powder, and salt.

3. Add eggs, egg yolk, melted butter, vanilla extract, and canola oil to mixture and stir to combine. Mix in the chopped dark chocolate chips.

4. Pour half of the mixture into a greased 9x13 baking dish. Drizzle 3 tablespoons of the caramel throughout the layer of batter. Pour the remaining batter over the caramel layer, covering all of the caramel.

5. Bake for 20-25 minutes.

6. Let cool for 5 minutes and then drizzle with caramel and top with cashews. Sprinkle with sea salt flakes and enjoy!
