Coconut Sugar Cookies


Ever craving a sweet and simple cookie that's still not too bland? Enter these sugar cookies. These coconut sugar cookies have just enough sweetness of a sugar cookie with lots of coconut flavor to give them that extra pop of flavor and sweetness. I don't know about you, but for me when it comes to cookies I don't like them too crunchy but they can't be too cake-y either. I also don't like them too too sweet but there is also nothing worse than a bland or dare I say... dry cookie. Needless to say I'm on the pickier side when it comes to cookies but these kept me reaching for more. They're a simple, delicious must try.

Bring on the coconut.

Personally, I've really come to love coconut and I feel like it adds that extra something to so many dessert recipes. This recipe is no exception! Of course, I highly recommend using sweetened coconut as unsweetened can really lack that sweet taste that goes so well with everything in this recipe.

For this recipe, you're going to start with beating your butter, sugars, and vanilla extract. To be honest, this is my favorite part when making cookies. The creaminess of the butter mixes so perfectly with the sugars and vanilla extract and it really is just a match made in heaven! It's the base of the perfect cookie.

Next, it's as easy as combining the flour, baking soda, and salt in a separate bowl. After, you'll add the eggs to the butter mixture- one at a time, beating to combine after each addition.

Quick and easy!

Finally (you guessed it), you'll gradually add your flour mixture to the butter mixture and beat to combine. Then comes the best for last- the shredded coconut! Gently fold in the coconut, being careful not to over mix or stir the cookie dough. Once the shredded coconut is folded in, you're good to go to start scooping the dough into rounds and placing them on an ungreased baking sheet.

Be careful not to let the cookies burn, as this recipe has the potential to have the edges reach that golden perfection that we all know and strive for when baking. Enjoy these cookies with a glass of milk and enjoy.

Coconut Sugar Cookies

It's the classic coconut sugar cookies with that something special mixed in just to bring it to that next level. Sweet, not too sweet, they're the perfect coconut treat that you've been missing!



Servings: 24 (depending on size of cookies)

  • 14 tbsp (1 ¾ sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 1 tsp vanilla extract
  • 1 ¾ cups flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • 1 cup shredded coconut, sweetened


1. Preheat oven to 350 degrees.

2. In a medium sized mixing bowl, beat butter, sugars, and vanilla extract on medium speed.

3. Combine flour, baking soda, and salt in a separate mixing bowl.

4. Add eggs to butter mixture one at a time.

5. Gradually add flour mixture to butter mixture and beat on low to medium speed until combined.

6. Fold in shredded coconut.

7. Place tablespoon sized rounds of dough on ungreased baking sheets.

8. Bake for 10-12 minutes or until edges begin to lightly brown. Remove from oven and let cool for five minutes. After, remove from baking sheet and move to wire rack to let cool completely.
