There's nothing like a tasty, moist (sorry it had to be said...), and rich loaf cake. Make it chocolate and it's that much better. This double chocolate loaf cake has a cocoa base with mini milk chocolate chips mixed in and is then topped with some more as well!

The addition of the berries is critical in enjoying a hefty piece of this yummy cake. I am partial to raspberries but I can only imagine topping the loaf with some blackberries would be just as tasty... maybe even yummier! Same with strawberries and if you're really trying to mix it up, throw some blueberries on there.

In my opinion mini chocolate chips definitely have regular ones beat. These minis will melt in the loaf so easily and will give that extra milk chocolate taste throughout. If you're feeling bold melt some on the side, heat up your piece of cake, and drizzle away.

Throw those beautiful, vibrant berries on to bring your double chocolate loaf to the next level! It will add a refreshing, fruity pop.

Mmmmmmm. Achieve that milk chocolate goodness. Sprinkle the mini chocolate chips down the middle of the loaf before popping it in the oven to give your cake that extra kick of chocolate.

Ingredients

Servings: 8

Loaf Cake

  • 1 ⅓ cup flour
  • ½ cup cocoa powder
  • ¾ cup granulated sugar
  • 1 tsp salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 4 tbsp butter melted
  • 1 cup light cream
  • 4 tbsp vegetable oil
  • 1 egg
  • ½ cup mini chocolate chips

Toppings

  • 2 tbsp mini chocolate chips
  • raspberries (or any other kind of berry)

Instructions

1. Preheat oven to 375 degrees.

2. Combine flour, cocoa powder, sugar, salt, baking soda, and baking powder in a large mixing bowl.

3. Add vanilla extract, butter, light cream, and vegetable oil and mix to combine.

4. Add egg and stir to combine. After, mix in mini chocolate chips.

5. Pour into greased 9x5 loaf pan and sprinkle mini chocolate chips down the middle of the batter.

6. Bake for approximately 1 hour. Let cool completely and slice within loaf pan or remove from pan and slice. Top with berries and enjoy!
