Once the weather starts to get a little bit warmer, my go-to cocktail is immediately an Aperol Spritz! There's something about them that just screams summer, and they're the perfect combination of fizz, orange flavor, and the classic Aperol bite. The original version is really perfect as-is, but one of my favorite things when the weather starts to get warmer is to find a frozen version of all of the cocktail faves.
While a frozen spritz may sound counterintuitive, this frozen slushy-like drink is inspired by the classic cocktail, with the usual ingredients, just with a frozen and extra fun twist. Similar to frose or a frozen marg, this take on a classic is one of our favorite ways to mix up a summery drink that (thank gosh) will also be sure to cool you off.
This frozen take on a classic has the ingredients of the classic Aperol spritz, plus two extras to make it well, you know, frozen! The only other addition is a squeeze of fresh orange juice which makes this extra refreshing. Not sure if anyone else feels this way, but New England summer + New Englanders who are still recovering from the freezing winter = New Englanders who are not used to the heat! This frozen cocktail is super easy and quick, and you'll start off by grabbing the frozen mango and the Aperol. One important tip to ensuring that the drink is thick enough is to make sure your mango is REALLY frozen, so if you just got back from the grocery store you will want to pop it in the freezer for a while until it's totally frozen again.
Then it's as easy as adding the frozen mango and the Aperol to a blender, and blending it until the mango is completely pureed and incorporated with the Aperol. I tried this recipe a few times, adding the ingredients in different orders, and found that by adding the frozen mango and Aperol first it ensured the mango would be totally pureed but not too thin, and that the Aperol would be completely incorporated.
Once the mango is totally pureed, you'll add the prosecco and club soda right into the blender, followed by a squeeze of fresh orange juice, which makes this drink extra refreshing!
Once added in, you'll just very briefly pulse the blender again to combine everything. By just briefly pulsing the blender, it ensures the ingredients are all combined but that the prosecco and club soda still have a little fizz. If you'd prefer to add the prosecco as a float on top you totally could do that also! It makes the top more liquidity but ensures the classic fizz is still there.
The final step is just to add some ice into the blender, then crush it all up! The ice really thickens this drink up, and of course makes it extra refreshing. I found that for two of these drinks two cups of ice was the perfect amount, but if you want it to be extra frozen you can pop it in the freezer for 15-20 minutes.
Once the ice is crushed, divide the mix between two of your favorite glasses or cups and garnish with an orange or clementine slice. If you've never sliced a clementine before, I highly recommend you try it! The color is unreal and the mini slice is extra cute.
