One of our favorite local restaurants we often went to when we were growing up had the BEST honey mustard chicken tenders. On their menu they also had a wrap made with these tenders, which sometimes our mom would order when we went. If she took half of it home, yours truly would often be the one snagging the other half. It was so simple with very few ingredients, but the deliciously-sauced chicken tenders plus a few veggies and some shredded cheese created the most satisfying wrap which I could scarf in just a few bites.
I knew I wanted to try and recreate this with a couple twists. First, for ease and a bit of a healthier twist, this "wrap" has pan-fried chicken. Our neighborhood fave included tomatoes in their version, but because I find they can be watery in any sandwich-like item, I substituted them for some thinly sliced bell pepper. And lastly, because it is a recent obsession of mine, I decided to use naan instead of a classic tortilla-like wrap.
You'll start by making the homemade honey mustard sauce. As the name may indicate, this sauce is truly just as easy as combining honey, dijon mustard, and a little mayo. In this case, I also added a sprinkle of cayenne which gives it a little kick. Because the chicken is in a wrap with lots of other ingredients, the cayenne really helps the flavor of the honey mustard stand out.
Next it's time to quickly pan-fry the tenders. You can either buy chicken tenders, or it works equally as well to buy chicken breasts and thinly slice them into tenders. I like to toss the chicken in a bit of flour as this helps create a golden brown outer layer of each tender with a little crisp. With just a little olive oil and a nice and hot skillet, these tenders will be done in just 5-7 minutes and ready to toss in the honey mustard.
Then it's as simple as assembling the wraps. You'll lay out one piece of naan, add the shredded lettuce, carrot, and thinly sliced bell pepper, and top with half of the chicken tenders. Sprinkle with lots of shredded cheddar cheese, or any other cheese you like or have on hand.
While it's not essential, I added some finely chopped cilantro as just like the cayenne, it can stand up to the ingredients in this wrap and add a bit of extra flavor. And that's it! Drop everything you're doing (because you're going to for sure need two hands), fold this baby in half and go for it!
Serve this super easy wrap for lunch or dinner, preferably with some fresh pineapple and a refreshing drink.
