Mozzarella Omelette with Cherry Tomatoes and Arugula


When it comes to breakfast, I'll be the first one to admit that I typically go for a carb filled option, often times a bagel with cream cheese or some toast with jam or jelly. I am really just a sucker for carbs, especially paired with a nice hot morning coffee. However, occasionally when I know I have a long day ahead of me or need an extra boost of energy then I'll turn to eggs. I love scrambled eggs but theres something extra filling and satisfying about an omelette.

When I do have those omelette craving days, this one is my go to and I almost always have the ingredients on hand in the fridge. It's simple but trust me when I say it's so delicious. A little arugula here, lots of cherry tomatoes there, and LOTS of mozzarella thrown in in between. Ready in just around 10 minutes, you really can't beat that.

The freshest ingredients

As always, fresh ingredients are key. Grab your eggs and whisk them up with a splash of milk and some salt and pepper. Then you'll pour the egg mixture into a greased skillet and let the mixture cook for a moment or two. Then comes the part when you're going to want to move the skillet around so all of the egg mixture is able to cook thoroughly on the skillet. Then just before it is cooked all the way through, you're going to want to sprinkle the cheese on half of the omelette, and once again (as always), don't skimp on the cheese. Shredded mozzarella is such a classic and let's be honest, melted cheese in the middle is the real star of any omelette. Next you will sprinkle the arugula and chopped tomatoes on top of the cheese.

Tomato time

Although it is important to ensure that all of your ingredients are nice and fresh, the cherry tomatoes are particularly important. Thank goodness we are finally approaching the season when tomatoes are at their best which is really key for this omelette. Plus they add that necessary pop of color that makes this omelette not only delicious but pretty to look at as well!

After your omelette is cooked all the way through and you fold it in half, you're ready to go. Grab an iced coffee or a glass of orange juice and enjoy!

Servings: 1

  • 3 eggs
  • splash 2% milk
  • salt
  • black pepper
  • ½ cup mozzarella shredded
  • ¼ cup arugula
  • ¼ cup cherry tomatoes sliced


1. Whisk together eggs and a splash of 2% milk in a small bowl. Add salt and pepper to mixture if desired and whisk to combine. Pour egg mixture into a greased skillet and cook on low to medium heat.

2. Tilt skillet as necessary while egg mixture is cooking, in order for the entire mixture to cook thoroughly.

3. When eggs are almost fully cooked but still ever so slightly runny, sprinkle mozzarella, arugula, and cherry tomatoes on half of the omelette and let the egg mixture finish cooking thoroughly.

4. Once done cooking fold the half of the omelette without the cheese and toppings over on top of the half with the cheese, arugula, and tomatoes.

5. Remove the omelette from the skillet on to a plate. Add additional salt and pepper to taste and enjoy!
