Recently, I have been wanting to experiment with and bake more cookies. The possibilities really are endless and they are always quicker and easier than I expect. The inspiration behind these peanut butter snickerdoodle cookies was a combination of my love of snickerdoodles and our previous Sea Salt Chocolate Chip Peanut Butter Cookies.

This recipe is your class cookie recipe. It's as simple as combining the dry ingredients, beating the sugars and butter (and peanut butter for this one), adding your last couple ingredients, and then mixing it all together! One of my favorite parts about this recipe is the slightly smaller size of the cookies. They make the perfect quick snack or dessert with a glass of milk on the side of course.

The star here- Peanut Butter!

One of the key ingredients of this recipe is of course, peanut butter! For this recipe, we used an organic peanut butter that I think made all the difference. It added some sweetness to the cookies yet still added that pure peanut flavor mixed in.

First, you will start by whisking and combining the dry ingredients, excluding the granulated sugar and brown sugar.

After combining the above ingredients, you will then beat the butter, sugars, and peanut butter together in a separate bowl until creamy. It is important to make sure your butter is soft but not overly softened or melted, ensuring that your mixture becomes creamy and stays the proper consistency.

Once mixed and creamy, add eggs one at a time to the butter and sugar mixture, beating in between additions. Add in vanilla extract and then gradually combine dry ingredient mixture to wet ingredients.

Next, it is one of the most important and critical parts. The coating and rolling of each cookie in the cinnamon and sugar mixture before baking! This will help to make sure each peanut butter cookie has the snickerdoodle coating we all know and love.

One of the best parts about this cookie is they only take 12-15 minutes to bake and then voila! Place them on a wire rack to cool and then serve warm with a glass of milk. The perfect winter to springtime cookie for all our peanut butter lovers out there!

Ingredients

Servings: 24 cookies

  • 2 cups flour
  • 1 1/2 tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • 12 tbsp unsalted butter (1 1/2 sticks)
  • 1/2 cup peanut butter
  • ½ cup granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • ¼ cup sugar with ¼ tsp cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk flour, baking powder, salt, and cinnamon in a medium sized mixing bowl to combine.
  3. In a separate bowl, beat butter, peanut butter, and sugars until creamy. Add eggs one at a time, beating in between additions. Add vanilla extract and beat to combine.
  4. Gradually, add dry ingredients to wet ingredient mixture and beat on medium speed until fully combined.
  5. Roll dough into tablespoon sized balls. Combine cinnamon and granulated sugar in a small bowl and roll each ball in cinnamon sugar mixture.
  6. Bake for 12-15 minutes. Once done baking, move to wire rack and let cool.
