This provolone grilled cheese with mashed potatoes and bacon is easy, so satisfying and delicious, and the perfect use for some Thanksgiving leftover potatoes!

Ingredients

Servings: 2 sandwiches

  • 4 pieces sourdough bread
  • 2 slices of provolone, about 1 ounce each
  • 4-6 tbsp mashed potatoes, leftover
  • 4 pieces bacon, cooked, crumbled
  • 2 tsp scallions, chopped
  • 1/2 cup cheddar, shredded
  • black pepper
  • 2 tbsp butter

Instructions

  1. Top one of the slices of sourdough with one 1 ounce slice of provolone, then top with 2-3 tbsp leftover mashed potatoes, evenly smoothing them over the provolone.
  2. Top with 2 pieces of crumbled bacon and 1 tsp chopped scallions, then top with 1/4 cheddar and some black pepper.
  3. Repeat with remaining sandwich.
  4. In a large skillet, melt butter over medium heat. Add grilled cheeses, pressing down lightly, and cook for 3-5 minutes until golden. Flip and continue cooking until cheese is melted and bottom piece is golden. Serve immediately, with additional black pepper and scallions.

NOTES

If leftover mashed potatoes are very cold, microwave desired amount for 10-15 seconds before using in the grilled cheese.

This grilled cheese pairs great with onion soup!
