Sea Salt Chocolate Chip Peanut Butter Cookies

Ever since our Brown Sugar Pecan Pie Cookies I've been thinking hard about what kind of sweet and a little bit chocolatey cookie I want to do next. Once the key ingredient of peanut butter came to my mind I knew chocolate definitely had to be incorporated as well because that is just a true match made in heaven. Of course, for any cookie you need the sweet to be paired with some salty so some sea salt flakes sprinkled on top are a must. Just 15 minutes to prep and you'll be on your way to enjoying a soft and chewy cookie with that creamy peanut butter flavor that we know and love!

Soft, chewy, and delicious

Okay so when we're talking salty to our sweet that means a hefty serving of sea salt sprinkled on top. When using sea salt for any recipe for sweets in particular, what sea salt you use is very important. I am a sucker for sea salt flakes. In my opinion, they add that subtle yet bold salty flavor to the top of your cookies or to any dessert you're whipping up.

The classic cookie

This recipe is your classic cookie recipe as it starts with combining your dry ingredients, flour, salt, baking soda, and baking powder. In a separate bowl, you will then beat the sugars, softened butter, vanilla extract, and of course peanut butter until nice and creamy. Then you will add the egg and beat to combine. You will then have a perfectly creamy and peanut butter filled mixture that will soon become your cookie dough.

After, you'll combine both mixtures together and then fold in your mini chocolate chips. Roll tablespoon sized balls of dough in your hand to round them and then sprinkle with sea salt before baking. Also, if you want some thinner, more flattened cookies you can press down the spheres of dough before baking to form small disk shaped dollops of dough. After baking, I like to sprinkle with some extra sea salt flakes. Then you're ready to get a glass of milk and enjoy some of these peanut butter filled cookies!

Ingredients

Servings: 24 cookies

  • 1 ¼ cups flour
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • ¾ cup peanut butter creamy
  • 1 tsp vanilla extract
  • 1 egg
  • ⅔ cup mini chocolate chips
  • sea salt flakes for topping

Instructions

1. Preheat oven to 375 degrees.

2. Combine flour, salt, baking soda, and baking powder in a medium sized mixing bowl.

3. In a separate mixing bowl, beat butter, sugars, peanut butter, and vanilla extract. Add egg and beat to combine.

4. Gradually add flour mixture to butter mixture, beating in between additions to combine.

5. Add and fold in mini chocolate chips.

6. Place tablespoon sized rounds of dough on ungreased baking sheets. Sprinkle a small pinch of sea salt on top of each round of dough. Bake for 10-15 minutes or until edges of cookies begin to brown.

7. After baking, move to a wire rack and let cool. Sprinkle additional sea salt on the tops of cookies if desired and enjoy!
