This fajita recipe is done in just 40 minutes, is super simple, and turns out so colorful and fresh looking!
STEP 1: Grill the peppers. Grill the Aurora Long Sweet Peppers until they are evenly charred and slightly softened. Remove from grill and slice into long strips. Set aside and keep warm.
STEP 2: Season the chicken. In a medium bowl, add the chicken, 1 tablespoon of olive oil, the spices, and the lime juice. Combine until the chicken is evenly coated in the spices.
STEP 3: Cook the chicken. Heat 1 tablespoon of olive oil in a large cast iron pan or skillet over medium high heat. Once hot add the chicken (in 2 batches if needed) and sear until both sides are blackened and the chicken is cooked through. Set aside and keep warm.
STEP 4: Cook the onion. Wipe out the pan slightly if needed then add the remaining 1 tablespoon of olive oil. Add the sliced onion, season with salt and pepper, and cook over medium heat until softened, 5-7 minutes.
STEP 5: Finish the fajitas. Return the chicken to the pan, add the peppers, and toss until combined and warmed through. Serve the fajita filling in tortillas with sour cream, avocado, cilantro, cheese, and salsa.
Can I omit the cayenne?
Definitely! The chicken will just be less spicy without it, but you could definitely leave it out or use less.
Can I use a different type of pepper?
We love using the Aurora Long Sweet Peppers in these fajitas because of their sweetness, and the long strips are perfect with the chicken and onions!
What’s the best type of pan to use for cooking the chicken?
A cast iron skillet works great for searing the chicken at a high heat so that the spices blacken and the chicken gets a perfect char!
The chicken, peppers, and onions can be stored in the fridge after cooking for 3-4 days and reheated in the microwave when ready to eat and assemble the fajitas.
I don't recommend freezing the vegetables, but the chicken can be frozen once cooked for up to 4 months.
