Strawberry Brown Sugar Pancakes


When it comes to brunch or breakfast, french toast, waffles, or pancakes have always been my go-to's. With summer approaching fast (thank goodness right?) these Strawberry Brown Sugar Pancakes are the perfect sweet and fruity breakfast or brunch to treat yourself to. They could not be easier to whip up and the brown sugar and strawberries pair so perfectly, cutting the sugary sweetness with a refreshing strawberry burst of flavor. I may even go so far to say that the class chocolate chip when it comes to pancake has some competition.

Yes these pancakes are packed with brown sugar and then drizzled with some real maple syrup, but as equally as important as the brown sugar and maple syrup are the strawberries! It's finally that time of year when you can find some glowing red, ripe, tasty strawberries and that's something that should be celebrated- with pancakes of course! I used the brightest, ruby red strawberries that I could find and it was well worth it. Before mixing your berries into the batter make sure that you chopped them up nice and finely so that you'll get lots of little strawberry pieces in every bite.

Easy and delicious

Overall, this recipe could not be easier to whip up. Essentially, you're just mixing the dry ingredients, then the wet ingredients, and then mixing it all up together! Make sure to whisk the wet ingredients together so your batter becomes nice and fluffy!

After your batter is done and you fold the strawberries in, heat some butter in a saucepan and then you'll be good to go to start making your pancakes! I typically let each side cook for around 2-3 minutes, flipping when I start to see little bubbles forming along the edges. For this recipe I also like to sprinkle a little extra brown sugar on top of the pancakes before I flip them over. This just gives the outside an extra little touch of sweetness! Then pour on that maple syrup and enjoy!

Servings: 5 large pancakes

  • 1 1/4 cup flour
  • 3 tsp baking powder
  • ½ tsp salt
  • ¼ cup light brown sugar
  • 1 cup milk
  • 3 tbsp unsalted butter melted
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup strawberries chopped
  • 1 tbsp unsalted butter chilled
  • light brown sugar additional for sprinkling
  • maple syrup optional


1. Combine flour, baking powder, salt, and brown sugar in a small sized mixing bowl.

2. Whisk milk, melted butter, egg, and vanilla extract in a separate bowl.

3. Gradually add dry ingredients to wet ingredients and whisk to combine.

4. Add chopped strawberries to batter and fold in to combine.

5. Add the tablespoon of chilled butter to a small to medium sized skillet. Allow the skillet to heat and butter to melt before scooping batter into skillet.

6. Scoop approximately ¼ cup of batter onto greased skillet. Sprinkle with additional light brown sugar if desired before flipping. Cook each pancake for approximately 2-3 minutes on each side. Drizzle with maple syrup if desired and enjoy!
