Thick Crust Spinach and Mushroom White Pizza


A homemade pizza has always been a go to for me when I need a quick and easy, yet delicious and filling dinner. Something about a homemade pizza is just more satisfying and deliciously doughy than getting a pizza out. That being said, sometimes I tend to fall into the same routine of making the classic cheese, which don't get me wrong is delicious and always satisfies. Although, sometimes I want a pizza that I can make at home that's still a different kind, mixing it up a little! I love white cheeses with creamy sauces, and what pairs perfectly with a creamy sauce and lots of cheese on top? Spinach and mushrooms! This pizza is the perfect thick crust, super filling, doughy, and delicious white pizza you'll love for any dinner you need to whip up at home.

Give the mushrooms a try, trust me.

Okay so trust me with this, if you are anything like me and think you are not a fan of mushrooms please just give them a shot on top of this pizza. I have never been a fan but they have gradually started growing on me recently and I have to say, on this pizza they are a must. They are truly the perfect addition on top of the cheeses (pairing particularly well with the fontina) and taste delicious mixed on top with the spinach as well. This is the pizza that could really sell you on mushrooms and then who knows, you might become a fan of them!

Lots of cheese please.

The three-cheese blend is also key for this spinach and mushroom pizza. I personally believe that lots of shredded mozzarella is a must and a key component for any homemade pizza. It really is the perfect cheese for a delicious base for your pizza. Also to no surprise to you I'm sure, I immediately knew that I wanted to also incorporate two of our other favorite cheeses, of course being fontina and parm. The three melted together on top is truly magical.

This cheesy dinner really is the perfect dinner for 2 (but if you're making it all for yourself I fully support that as well, of course). Also, it pairs deliciously with a glass of white wine of course. Cut into slices and enjoy!

Thick Crust Spinach and Mushroom White Pizza

A white pizza with a creamy and cheesy sauce, 3-cheese sprinkle, and spinach and mushrooms on top! The perfect quick and easy, tasty weekend or even weeknight spinach and mushroom white pizza!



Servings: 2


  • ⅔ cup water warm
  • 1 tsp yeast
  • ½ tsp sugar
  • 2 cups flour
  • ½ tsp salt
  • 2 tbsp olive oil extra virgin


  • 1 tbsp butter
  • 1 ¼ cup milk 2% or whole
  • ⅓ cup parmesan
  • ½ tsp garlic
  • 2 tbsp flour
  • salt
  • black pepper


  • 2 tbsp olive oil divided
  • 1 cup baby bella mushrooms sliced
  • 2 cups spinach
  • ¼ cup parmesan shredded
  • ¼ cup fontina shredded
  • ½ cup mozzarella shredded



1. In a small bowl, combine warm (not hot) water, yeast, and sugar. Place in a warm spot and allow the yeast to bloom, about 15 minutes.

2. In a large bowl, combine flour and salt. Add the olive oil and yeast mixture and stir to combine. If you are using a mixer, use the dough hook attachment and knead the dough for 5-6 minutes, as it pulls away from the side of the bowl. If you are not using a mixer, you can also lightly flour your work surface and knead the dough by hand until smooth.

3. Place the dough into a lightly oiled bowl and cover with plastic wrap. Let rise for approximately 1 hour.


1. Preheat oven to 450 degrees.

2. Lightly grease a pizza pan or baking sheet. Stretch the dough into a round (or oval) shape and lay on greased pan.

3. In a medium to large sized skillet, melt tablespoon of butter over low heat. Add milk, parmesan, garlic, flour, and salt and pepper to taste. Stir until sauce begins to thicken and then remove from heat.

4. Spread desired amount of sauce onto pizza dough leaving about ½-1 inch of space around the edge of the dough for the crust.

5. In a medium sized skillet, heat tablespoon of olive oil over medium heat. Add mushrooms and let brown for 1-2 minutes, stir, and continue sautéing for approximately 3-4 minutes.

6. After cooking and browning the mushrooms remove them from the skillet and set aside. Using the same pan, add remaining tablespoon of olive oil and spinach and sauté for approximately 5-6 minutes.

7. Sprinkle parmesan, fontina, and mozzarella on pizza over the sauce. Add sautéed mushrooms and spinach. If desired, sprinkle a small amount of additional cheese over mushrooms and spinach.

8. Transfer pizza to oven and cook for 10-15 minutes or until crust begins to brown.

9. Remove from oven and cut into 4 equal sized slices using a pizza cutter. Serve immediately. Enjoy!
