It's finally starting to get warmer where we are which means we've started to brainstorm all the summer dessert treats we'll be making in the next few months! You know, the type you crave on an extra hot day, can bring to a summer BBQ party, or just when you're looking for some weekend baking fun that won't be too heavy.

Enter the season of ice cream sandwiches!

So we all love a good cookie, who doesn't?! But to summer-ify even the best cookie, a cookie ice cream sandwhich is definitely in order. When we were little, we would always go for the chipwhich when the local ice cream truck rolled by, and these Triple Chocolate Chocolate Chip Ice Cream Sandwiches are our EXTRA chocolately, extra delicious, take on a classic.

What ingredients do you need for the cookies?

This recipe starts off by making the chocolate cookies for these rich and indulgent sandwiches. Being a triple chocolate recipe, you better believe that the cookies are super chocolatey, crinkley, and downright delicious. Here are the ingredients you'll need:

  • flour
  • salt
  • baking soda
  • cocoa powder
  • dark chocolate - to melt, which makes this cookie dough extra rich and naturally chocolatey
  • butter
  • granulated sugar
  • brown sugar
  • vanilla

How do you make the cookies?

This cookie recipe couldn't be easier which is one of the reasons we love it, especially in a multi-step ice cream sandwich recipe! These cookies also just have a bit of chill time, but only 15-20 minutes, so there's really not much time at all standing between you and the sweetest summer dessert sandwich. To make these cookies:

  1. Preheat the oven to 375 degrees and line 3 baking sheets with parchment paper.
  2. In a medium bowl, whisk together the 4 dry ingredients.
  3. Melt the dark chocolate until smooth.
  4. Cream together the butter and sugars, then add the vanilla.
  5. Beat in eggs and melted chocolate.
  6. Add the flour mixture and beat until just combined.
  7. Stir in half of the chocolate chunks then chill dough for 15-20 minutes.
  8. Scoop dough into 18 cookie dough balls, placing 6 on each baking sheet. Press on remaining chocolate chunks.
  9. Bake for 11-13 minutes, remove from oven, and gently whack cookie sheet on counter to help flatten cookies.
  10. Cool on baking sheet for 10 minutes then on a wire rack completely.

These cookies are as simple as your typical favorite, with the addition of some melted dark chocolate to make them extra chocolatey without being overly sweet.

Remaining ingredients for the ice cream sandwiches

Once the cookies are all cooled, these sandwiches come together super easily with just three remaining ingredients. While there is melted dark chocolate as well as chocolate chunks in the cookies, to ensure these cookies are in fact triple chocolate, you'll want to grab just a bit more chocolate for dipping. Here's what you'll need to finish these:

  • chocolate chip ice cream - chocolate chip is one of our favorite flavors, and it of course pairs perfectly with the chocolate cookies, without being overly sweet
  • dark chocolate - a bit more for dipping!
  • coconut oil - melting the remaining chocolate with a little coconut oil makes for the easiest "magic shell" which just means that once dipped, the chocolate will harden up quickly for a fun shell

I always forget how easy ice cream sandwiches are to make, as once you have the cookies made, it's really as quick as grabbing a favorite ice cream and in this case 2 ingredients for a magic shell!

How do these sandwiches come together?

Once the cookies are cool it's super simple and pretty quick to complete these ice cream sandwiches. The steps to finish these summery desserts are:

  1. Once cookies are completety cool, scoop one scoop of ice cream onto half of the cookies, topping each with another cookie, gently pressing down with your palm to smoosh the sandwich.
  2. Place the sandwiches onto a cool baking sheet and freeze for 20 minutes.
  3. Add remaining dark chocolate and coconut oil to a microwave-safe bowl. Microwave in 10 second intervals, stirring in between, for about 1 minute total, until melted and smooth. Set aside to cool while sandwiches freeze.
  4. Remove the sandwiches from the freezer and dip each into the melted chocolate. Eat immediately or return them to the freezer until ready.

The only important tips here are that ice cream melts FAST. So work quickly to scoop each scoop on, and try and get them into the freezer as quickly as you can. Once they re-freeze for 20 minutes, they'll be much more solidified and ready to dip into the melted chocolate and coconut oil.

Chocolate Cookies

  • 2 cups flour
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 1/2 cup cocoa powder
  • 6 ounces dark chocolate
  • 2 sticks butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs, room temperature
  • 5 ounces dark chocolate chunks (or chips), divided

Chocolate Chip Ice Cream Sandwiches

  • 1 1/2 quarts chocolate chip ice cream
  • 5 ounces dark chocolate
  • 1 tbsp coconut oil

Instructions
